Dear Rabbi Simon,
I gave my one-year-old baby some food that was cooked with meat, and then 10 minutes later I gave him a dairy bottle without giving him anything to eat in between. Was this a problem? (If it’s not too much trouble, could you give me the Halachic sources in the answer? I like to look the sources up myself)

No problem WRT an infant. See Emet Le-Yaakov (R Yaakov Kaminetzky) YD 89:36. Some are lenient even until age 9, after waiting an hour max.

Where do you stand on quinoa (and the kitniyot ban) for Pesach?

Dear Tzippy,
In line with other American authorities, I am in favour of quinoa. Although I reject completely the voices (mostly from Israel) seeking to abolish the ban on kitniyot entirely, IMO we do not need to include in the prohibition pseudo-grains that were unknown in the Old World until modern times. Best to buy with a Pesach hechsher though, to be free of any possible wheat contamination.
