Am I allowed to eat leftover Matzah from Pesach instead of bread for Shabbos?

Hi Matt,
Sure. There is no objection to using matzah (in place of challah) for Shabbos. Use whole rather than broken pieces to fulfil the mitzvah requirement of lehem mishneh.
By the way, there are those who have the minhag of using matzah for (part of) lehem mishneh every Shabbos between Pesach and Shavuot in order to emphasise the connection between the Redemption from Egypt and the Receiving of the Torah. This itself is (or would seem to be) the meaning/purpose/significance of Counting the ‘Omer day by day. Enjoy the crunch.

Where do you stand on quinoa (and the kitniyot ban) for Pesach?

Dear Tzippy,
In line with other American authorities, I am in favour of quinoa. Although I reject completely the voices (mostly from Israel) seeking to abolish the ban on kitniyot entirely, IMO we do not need to include in the prohibition pseudo-grains that were unknown in the Old World until modern times. Best to buy with a Pesach hechsher though, to be free of any possible wheat contamination.
